With over 15 years of culinary experience and a distinguished career across the EVT portfolio from 2013 to 2022, Smith-Thirkell leads the kitchen at Capitol Bar & Grill, QT Canberra’s signature and award-winning restaurant.

WA born and bred, Lynch’s culinary journey reflects a commitment to paddock-to-plate philosophy, accentuating the importance of local producers and fresh, seasonal produce, reflecting his respect for ingredients with an innovative simplicity. This dedication was instrumental when Santini Bar & Grill won the WA Good Food Guide Awards as Best New Restaurant in 2018 and later earned the title of Restaurant of the Year in 2019, along with four prestigious chef hats.
