Executive Chef of Capitol Bar & Grill, Michael Box, discovered his passion for cooking started at the young age of 13. Completing his training at The Hotel School, Box has worked across a number of NSW institutions including The Victoria Room, Momofuku Seiobo, Nomad, The Cut and Kosklea Kitchen. Since joining the QT Hotels & Resorts in 2015, Box has worked across QT Sydney, now QT Canberra.
In this role he developed an unrivalled pedigree in championing a food first philosophy. This philosophy celebrates farm-to-table freshness, working in close proximity with local producer and providores. Michael Box brings exception quality, serving prime cuts and wood-fired theatrics to Capitol Bar & Grill.
