Simplicity, quality and great flavours are the defining roadmap by which Adam Lane approaches his food, delivering an eclectic and boundary pushing menu for Yamagen which has taken sophisticated Japanese dining to an entirely new level.
With dishes as visually spectacular as they taste, Lane has reinvigorated the Gold Coast’s longest running Japanese restaurant, transforming it into a must-dine premium destination, worthy of travelling for.
Boasting a star-studded and comprehensive resume, Lane’s culinary repertoire flourished in the art of Asian cuisine. He cut his teeth in the kitchens of some of the world’s most recognisable establishments such as London’s Nobu, Sake, Sushi E, Tetsuya and London’s Nahm; learning his craft from celebrated chefs including Nobu’s Nobu Matsuhisa and Nahm’s David Thompson.
Since joining QT Gold Coast, from Kiyomi at The Star in 2017, Lane’s innovative twist on traditional Japanese has continued to earn him accolades. His menus are designed to inspire a sense of “occasion” and intrigue where guests come together easily to enjoy. The share style menu draws from the classic Japanese schools of sashimi, robata and modern Japanese share plates in new and exciting ways.
He works closely with Queensland suppliers, boutique farmers and specialist growers to deliver the freshest and best tasting local seasonal produce for his menu. He’s also seized QT’s rooftop garden to grow special Japanese herbs and exotic greens fresh from garden to plate.
